Summer Berries

Strawberries, cranberries, blackberries, blackcurrants, redcurrants, gooseberries, bilberries, loganberries and the king of them all the raspberry cultivated 500 years ago and known for its healing properties.  Strawberry juice has antibacterial properties. Blackberries are high in vitamin E and folate. 

Key nutrients :  Powerful Bioflavonoids, potassium, protein, fibre, calcium, iron, carotene, folate, Vitamin C and vitamin E.

Healing Properties :  Beneficial in a calorie controlled diet.  Prevention of the breakdown of the protein collagen.  May help prevent varicose veins and may ease rheumatoid arthritis.  Fibre to promote a healthy colon.    Raspberry, blueberry and cranberry juice can be used for urinary tract infections.  Bilberries improve night vision.

Choosing and Cooking : Best eaten raw, wash all berries prior to eating.   Can be used to make delicious jams, fruit crumbles, sorbets, fruit juice and pies.   Store in refrigerator if storing is necessary!
