Broad Beans

Seasonal from May to September are a high protein food rich in dietary fibre.    Excellent source of folates and good amounts of a number of vitamins.

Key nutrients :  Potassium, Calcium, Iron, Magnesium, Phosphorous, Vitamin C, Sodium and Zinc. Also vitamins B1 and B6, riboflavin and niacin.

Healing Properties : Pulses are beneficial in the prevention of anaemia, colon cancer, diabetes and heart disease.  100g of broad beans provide 23% of recommended daily level of potassium.

Choosing and Cooking : Young and tender broad beans can be cooked in their pods for 3-5 minutes then put into cold water to split and remove to eat.   Buy as fresh and young as possible.  Pods are best firm and crisp and can be kept in a perforated bag in the fridge for up to 5 days.
