ASPARAGUS – Seasonal during the months of April, May and June for 6-9 weeks.    Rich in potassium and an excellent source of the B vitamin folate.    Stimulates the kidneys and helps to relieve water retention and maintain a good water balance in the body. 

Key nutrients: Potassium, Vitamins B1, C & E; Folate, Iron, Phosphorus, Zinc and Fibre.

Healing Properties : Beneficial for bloating, high blood pressure and cataracts.  Makes an excellent natural detoxifier.  Asparagus has been used from ancient times being recommended for overweight patients and believed to relieve the symptoms of a number of various conditions from bronchial to bladder.

Choosing and cooking : Best purchased fresh and locally and eaten on day of purchase otherwise store wrapped in a damp tea towel.    Snap stalks, trim and boil whole upright preferably in 6cm of water.  Cover and cook until tender, approximately 5 minutes.
