CITRUS FRUITS

CITRUS FRUITS

Key nutrients : Vitamin C, dietary fibre, potassium, folate, carotenes, calcium, fructose and phytonutrients.

Healing Properties : Satsumas, oranges, tangerines and grapefruits are packed with vitamins to keep the immune system strong.  Vitamin C helps the body absorb iron to avoid anaemia and reduces the risk of developing cataracts by boosting lens protection.  Studies indicate regular consumption of citrus fruits also reduces the risk of stomach cancer by blocking the formation of cancer-causing substances.   Oranges are excellent for the treatment of the common cold and gum protection.

Choosing and Cooking : Fruits best eaten in their raw state to take advantage of the fibre of the fruit.  Store at room temperature.   Add to vegetable or fruit salads.  Use in making marmalade, chutneys, sorbets, jellies and mousses.
