GREEN BEANS

I love this time of year when the mange tout, French beans and runner beans are abundant and nothing pleases me more than picking them fresh from my small vegetable area and having all three for a healthy supper.  I have to admit to watering during this amazing heatwave, but this is all in a good cause!  Globally there are approximately 150 different varieties in all shapes, sizes and colours all sharing similar health benefits.

Key nutrients :  Vitamins A,C,K, B6 and folic acid.  Minerals include calcium, silicon, iron, manganese, potassium and copper.  They provide protein and fibre and contain no cholesterol being low in fat and calories. 

Healing Properties : Reduces risk of heart diseases, colon cancer and controls diabetes.  Green beans provide a boost to the immune system and benefits eyes and bones whilst also regulating digestive processes.  Lutein and Zeaxanthin prevents vision deterioration.  Silicon relatively rare in most foods is a key element in bone regeneration and overall bone health.  Excellent for digestive issues - 110grams provides 15% of the daily recommended fibre.

Choosing and Cooking : Select strong healthy looking beans and if storing keep in a brown paper bag in the fridge.   Cook dwarf, runner and mange tout in the minimum of water with a little sea salt for about 5 minutes or al a dente and drizzle with a little oil with a few twists of pepper to enjoy at their best. The beans should still look their most amazing bright green colour.   I’m off to pick mine now.
